Answer to the “Test Your Knowledge” Quiz:

Of course you know that fruits and vegetables are part of a healthy diet, and now you know the answer about whole-fat dairy (such as whole milk), but pepperoni is a processed meat, which is unhealthy both to your heart and the rest of your body (including an increased risk of cancer found with processed meats).

What the PURE study found was that unprocessed meats in moderation could be part of a heart-healthy, balanced diet. Usually, these are the cuts of meat that you would cook or that have had no chemical preservatives added to them. In other words, they have had minimal processing.
